Happy 4th of July – Menu

I always enjoy combining good food and good sex (though not at the same time. I detest smoshing). Here is a holiday menu for kinksters everywhere!

Menu: Deviled Eggs – three ways, Beet Salad, Black ‘n Blue Burgers, Mixed Berry Pie, Whipped Cream.

Deviled Eggs – Three Ways

24 eggs, boiled

1 c. mayo (real mayo, not Miricle Whip)

salt and pepper to taste

Cut boiled eggs in half, spoon out the yolks into a small bowl. Combine yolks with mayo and salt and pepper. Divide this mixture into three bowls. Add the ingredients in one of the three versions to each bowl. Mix and fill egg whites.

Version 1

8 oz. tuna packed in oil

1 tsp lemon juice

2 tsp. dill, dried

1/4 c. chopped green olives

Version 2

1 tsp. dried mustard

1 tsp. pimenton (smoked paprika)

Version 3

1 Tbsp. capers, chopped

3 strips bacon, fried and chopped

crumbled blue cheese to top

Beet Salad

4 cups roasted beets (to roast beets, cut of top and bottom, wash, rub with olive oil, wrap in foil, bake at 425 degrees for 50 minutes. Cool and peel.) 1/2 inch dice

1 cup Manderine orange slices or 1 orange, peeled, segmented and sliced into small pieces

1 cup green olives, chopped

1 cup feta cheese, crumbled

1 cup julienned red onions

1/2 cup olive oil

1/4 cup good red wine  vinegar

Salt and pepper to taste

Combine all ingredients in a salad bowl and toss.

Black ‘n Blue Burgers

1 lb. ground beef, 85/15 preferred

1/2 c. onion, small dice

2 cloves garlic, crushed

salt and pepper

Combine all above in a bowl. Mix gently. Pat into patties and grill to liking.

Top buns with:

Mayo

Caramelized onions (slice 3 onions thin. Heat 3 Tbsp butter and 1 Tbsp olive oil in pan. Add onions and stir over medium heat until caramelized – about 20 minutes. Add 1 Tbsp sherry vinegar.)

Blue cheese (preferably Purple Haze by Cowgirl Creamery)

Three Berry Pie

Two pie crusts (I use store bought most of the time)

4 cups blueberries (frozen okay)

2 cups  blackberries (frozen okay)

1 cup raspberries (frozen okay)

1 cup sugar

2 Tbsp corn starch

1 tsp lemon juice

1 tsp. ground cinnamon

1 tsp. ground cloves

Put one crust into deep dish pie pan. In a bowl, toss the remaining ingredients together. Fill pie shell. Top with second crust and crimp edges. Cut in vents to top crust. Bake for 75 minutes in 400 degree oven.

Whipped Cream

2 c. whipping cream

2 Tbsp sugar

1 Tbsp vanilla

Chill a glass or metal bowl in fridge. When ready, add cream and vanilla to bowl. Using a hand mixer, beat on high until peaks form. Add sugar and mix gently.

Preferably have someone serve it while wearing only an apron and heels!
